Ha, you're a genius in computer, not in kitchen.
You don't pour the BB sauce undiluted into the pot,
try to chop 1 TBSP rinsed black beans with garlic, ginger, shallot,
and chilli, stirfry in wok until fragrant, add  clams ,some sake or unsalted
Shaoshing wine 1/4 cup chicken broth, cover and steam for 4-6  minutes.
Check for doneness. Do not overcook.
I like it poached in lemongrass broth, with some chilli leaves.

Need to wait for my malaysian cook to come back.  He is much better cook than the one we have now.  However, his cooking is complicated and need a lot of specific ingredient....

And besides, I am thinking to sell my shares once the cook come back.  A lot of trouble owning a restaurant...
