It is possible to do over $1,000 sales a day at Yaohan foodcourt, so it is not that expensive.
I used to run a sandwich shop at Harbour Centre, $48,000 sales per month, the rent was $2,000.
It worked out only less than 5% rental expense, not bad in 1980.
Generally speaking, when you do the budgeting, the majority goes to Food and Labour cost, then
rent and other Operating expenses
For examples: $1,000 daily sales x 30 days
$30,000(Sales)- $7,500(25%Food Cost) -$ 6,900(23% Labour Cost) -$5,000 (16.7% Rent)-$1,000(3.4% Utilities)-$1,000 (3.4% Opex) = $8,600 operating profit(28.67%)
So if can manage to do $1,000 daily sales at Yaohan, excluding party trays, which would bring in 40-80% extra sales usually under table cash.
you are in pretty good shape to start with and it is quite possible. Long Hair used to do tons of catering service at Crystal Mall and the clients
continued to order from him even he moved to Richmond location.
If you are operating a coffee bar, all you need is to use up 2 Kilo of coffee a day, the coffee sales alone would almost generate $1,000 daily sales,
add 50% food sales then you are on the safe seat. As coffee suppliers would give you 30 Days credit, that mean, you sell $30,000 worth of espresso/Cappuccino/latte
before your first payment of $1,200; typically the cost of a $4.00 Latte is 16-18% including disposable cups etc. |
