Of course it's due to the culture and quality of the ah jei, but at the end, it's due to the price too.  The ah jei has to be able to serve 10 tables per hour while making less than $10 tips/hour.  The western style waitress makes more than $30tips per hour and do less.  Who would try harder to provide better service?

With the low incentives from cct, which type of waitress would work there?  It's the typical ah jei lor.  Keep that in mind when next time you pay tips in cct.  It's Asian culture to give 10% or less, and it's shared with all staffs in the restaurant.  Maybe you can start changing this culture by giving 20% tips every time.

hahaha, then you should go to a higher class cha chaan tang in either Hong Kong or Shanghai. The food and service are good.
In mainland China, the service industries (like restaurants, taxi and hotels) do not even expect tips, but their services are still top notch.

I mean they "don't expect tips". Well, I never left any tips in China (hotels, restaurants or taxi), so I don't know if they accept if I give them.
I didn't give tips because some other people told me tips are not expected in China's service industries.
The service industry there believes that good service should be a standard and should not expect extra tips.

I gave tips in high class hotels in China and they accepted it. But I don't think they expect tips from everyone or everytime.

However, I never gave tips when I just dined in a regular restuarants. They must thought I forgot the money if I left the tips on the table. I guess they would call me back if I had not walked out of the restuarant.

I know what you mean. People from North America are used to giving tips at restaurants and taxi etc. So they thought it is the same everywhere else.
Clearly, that is not true. China is an example where tipping is generally not expected.
Some people thought, China wor, so they must be expecting tips like crazy. These people should travel outside of North America more to understand the world more.
