每一個響夜市o既食物攤檔都需要有"FOOD SAFETY"牌照先可以開業, 開業前市政府衛生部門同消防局亦會派出INSPECTOR親身到攤檔檢視先, 要符合所有要求先會發出經營牌照...
當然, INSPECTOR 唔係日日o係夜市度, 實在衛唔衛生就DEPENDS在檔主同僱員既良心囉...
