I do it year round, in fact, I just cooked  frog leg hot pot rice last night.
Done in 15 minutes

Make sure they are not freezer burn.
Defrost in light salted water, pat dry with towel,
marinate with ginger juice and wine for 2 hours.
tossed with tapioca starch, red date and cloud ear fungus.
Cook hot pot rice for 8 minutes, add frog legs and cook for
5 minutes. Turn off heat and allow to steep for another 5 minutes.
