That is what I insist:
I don't mind to pay the fair market rate, but if I find out they cheat on the weight,
I'll take them to federal court.
I do not care it is a common practice among Chinese restaurants, but it is violation of federal law. The famous BBQ shop got shut down by the fed for tempering the scale 2 years ago.
So they charge you 2 dollars cheaper per lb. and cheat you 3 lb. what kind of deal do you get?
$8.99 x 12 =$107.88
you saved $4 and they cheat you $26.97 therefore you are paying  $11.99 per LB.what kind of deal is that?
I cannot tolerate people cheating on me, period.

上星期去左食藝食kingcrab﹐ 問佢地D kingcrab幾重? 企檯話 10 - 12 lbs..甘我地就同佢地講要隻大架啦(多人食)。跟住企檯羅左隻黎話最重依隻(8 lbs)﹐我覺得同平時其它地方話十幾磅既大少差唔多~ 煮出黎有又好多好抵食甘~ 係唔係其實D kingcrab 大約得 8 - 10lbs咋? 但平時老吹話十幾磅黎扼秤?

他真的有拿出一隻勁大的蟹給我們看架﹐但係真正上檯卻只像隔離檯叫套餐的那些普通蟹 (8 磅左右) ﹐真失望

I can tell you, many Chinese Restaurants have been doing this kind of trick for long la. Not just limited to King Crab, but as simply as fish, prawns, crabs, geoduck, ...... everything that counts by weight unit, you'll never get the exact weight they claim.

Cheating on weight or misleading customer are both wrong, no matter what the reason is.
You go to Portuguese/Italian restaurant and order Bacalau and they served you fresh codfish instead of salted cod. You would have all the ground to complain no matter how good the food is.
Many people doing the wrong thing  together do not make it legitimate.

well unfortunately there is nothing you can do...unless you have proof...or you go into the kitchen with them and watch them while they cook
