穗火鍋店「嫩牛肉」豬肉製

【明報專訊】廣州一火鍋店的「嫩牛肉」竟是豬肉醃製而成。有市民到天河區一間著名重慶火鍋店聚餐，發現所謂「嫩牛肉」用水洗後立即褪色，多名經驗廚師鑑定後，都認為是用牛肉精炮製出來的豬肉。

《南方都市報》報道，上周五晚，張小姐和3位朋友到天河區崗頂一間著名重慶火鍋店聚餐，她們點了兩份「嫩牛肉」，牛肉看上去色澤鮮艷，氣味誘人。張小姐說，餐後她將剩下的一份「嫩牛肉」帶回家，打算給寵物狗吃，豈料洗後的「嫩牛肉」立即褪色，不再是牛肉的猩紅色而變成粉紅色，「這分明就是豬肉。」

記者再往該店買了「嫩牛肉」請多位有經驗的廚師鑑定，也都認為就是豬肉，從肉質粗細、紋理、色澤還是氣味判斷，很可能是用「牛肉精」炮製。但火鍋店店員堅稱是牛肉，只是為增強色香味用香料醃製過。
