Zue's Lazy Banana Bread
Banana bread is already quite easy to make. I've made some alternatives for healthier bread but still easy. Fool Proofed!~
So easy, you can't go wrong~


4 ripe bananas
1/2 cup butter, melted
1 egg, beaten first
1 tsp vanilla extract
1 tsp baking soda
1 cup sugar (can sub. half cup with Splenda)
1 1/2 cup flour


1. Preheat oven to 350 F, grease a baking tray (I like glass ones) with some butter.
2. Mash bananas, then add sugar, butter, egg, vanilla extract and baking soda, mix well.
3. Add in flour and mix until no more flour lumps, add nuts if preferred.
(I add walnuts inside batter and on top for protein; Flex seeds sprinkled all over top for fiber)
4. Bake for 1 hr.

Only has banana and fresh fig.

wow! how did yours turn out? fresh figs huh?....must've been very moist. You must've had to use less sugar!

I am very please with mine (considering it's the first time making banana bread). Will try mixing other things in them next time.

Did you use black Mission Fig? and how come the loaf pans are stacked together?
I would freeze the banana first before mixing with the rest of ingredients.
Homemade banana bread are always superior to store-bought version cus you will not put garbage additives to the cake.

I got a flat of Figs from Costco. I think they are black mission figs. Pretty sweet. I only used 1/2 cup of sugar.
the pan just looked like they stacked together. It's only 1 pan.
Turned out pretty moist and not overly sweet. We don't like nuts in our banana bread. That's why I didn't add any in it.

I was also surprised that it turned out good. Cos I didn't even separately mix the wet and dry ingredients before mixing them together.

why freeze the bananas?
I happened to freeze them coz i had old bananas but didn't feel like eating them, so I put them in the freezer. So this happened by chance!

It is my trick,
1. when banana is fresh, it is semi solid and does not blend well with dried ingredients, but  if you freeze and thaw banana ,
     then it becomes liquid and incorporate much easier without any equipment.
2. Banana is best when it is fully riped, when you buy eating banana , they are too unmature for baking and lack of flavour
3. Measuring is much easier, you can just measure by the volume

No wonder! Mine turned out very aromatic and flavorful! Blending was easy too! No mixer! All I used was a masher and egg beater!

I am having a slice for breakfast and still taste very moist. I had excessive walnuts and flexseeds on it so it keeps me full.

just a side question, when making strawberry banana juice, is it better to use freezed banana too?

Because you have done the right procedure, even unintentionally.
And, when the cake dries out, you can make french toast or bread pudding with it.

Yes, using defrosted fruits you do not need to add too much extra liquid to the blender,
the juice would not get diluted and water down so much, sugar become unnecessary.
