vancouver is  best in north america & most part of europe, but definitely not
comparable with hk.

It is not that  we lack of fine chefs and restaurateurs in Vancouver, there is a very small market for
High end Chinese restaurant to survive.
4-5 years ago some restaurants featured $2,000-2,800 /table wedding banquet in Richmond, just how
many people are willing to spend that kind of  money these days?
It is not rare for people to feast on HK$2,000 a pop abalone in Hong Kong , but  it is almost impossible in Vancouver,
for the past 30 years

Whatever, your "ar So"  said is wrong,( or another Mr. T? ) for mid price food, especially seafood, Van is not bad. (your ar son probably hasn't tried ALL resturants in HK and Van)

PLUS ..  we all know, Vancouver is not the best in chinese food for N/A. (I assume you are talking about chinese food?)

Well, we know old people are stubborn too, lots of old farts in Vancouver say Vancouver food is good ..  lots of old farts in London say London food is good ...

Vancouver Restaurants 跌晒 Watt la... but I still prefer having a meal here 'cause I can enjoy it without:

- line up
- car parking hrs, once you missed the time, you either need to pay expensive rate
- or parking at illegal parking spot, better keep an eye on police...
- eat in a hurry 'cause more ppl are waiting...
- food safety

口味呢方便就各人有各人既口味, 佢話好味既野, 大家未必覺得好味.
不過, 佢介紹過既食肆就真係多左人慕名而去幫襯既, 蘇施黃佢真係有一定既影響力的.

I used to listen to her radio show back in 70's,
she is in entertaining biz, all right;   from her TV food criticism, just loud mouth with little understanding of food.
Taste is subjective, you can say you like or dislike some food, but you cannot condemn professionals without a valid point.

2 years ago, he was asked to prepare 6  platter of  Appetizer,   6 varieties of abalone cut into bite-size pieces, HK$50,000 each tray.
for visiting officials and tycoons  from Beijing. Half  of which  left untouched.

She said she graduated from Univ of Alberta. Went back there for visit 10 yrs after graduation. Then after another 20 yrs, recently went back there again. Clearly, she thinks Canada culinary scene is too boring.

I do not think it is feasible to open a top class Chinese in Vancouver at this moment,
the market is not ready and I do not have money to burn.

the most famous chef ever worked  in vancouver was called lam kam shing, is now working in peking.
he used to work at the down town hotel called new world. then work at the one on west broadway
on the ground floor of holiday inn.

可能是我接觸飲茶 是在溫哥華


所以覺得新瑞華   華榮(龍井軒)  的飲茶不錯
其他溫哥華的飲茶都不好吃

may去香港也許沒有到高級的茶樓去
所以覺得香港的茶樓並沒有太特別好吃

Few years ago, I went to the Chinese Restaurant @ Regent in Hong Kong (the one Kelly Chen got married). Dim Sum was great. However, the Chinese restaurant in Vancouver can produce the same quality but mush better price. For Dim Sum, Vancouver is better. For cheaper food such as "Abardeen Fish Ball Rice Noodle", Hong Kong is much much much better!

There are certain fish you should not use ginger, but dried tangerine peel instead.

there's no way that vancouver's dim sum is better, just the freshness of the ingredients make a lot of difference.
remember that we sometimes feel the food is better here is we compare the best ones here with below average ones in hk, and the average ones in hk are not too comfortable to dine in, hence we have the feeling that the food are not great as well.
a new one star michelin guide dim sum place charges only hk$16 for har kaw, average price around hk$20, but it's so crowded there that i doubt many of us here would enjoy it that much!
one advantage or disadvantage we have here is that the high end restaurants don't charge that much more than low end ones, unlike in hk, the prices can be many times over.

Usually I do not take those shows seriously, but
there are  certain concepts needed to be clarified.
There were some really good cooking teachers back in
60's and 70's like 譚國梅  李曾超群 but now everyone considers
themselves diva of cooking shows

That's why I compare the high end dim sum in Vancouver (such as Kirin) with a 5 (or 6, no idea) star hotel in Hong Kong. The quality of the food and comfortability of the environment are quite similar (except you can't see the harbour in the high end restaurants in Vancouver). However, the price is much better in Vancouver.

I don't think the high-end dim sum in Vancouver is decent, they are comparable to
2nd. or 3rd. grade in Hong Kong. and except for a handful of restaurant, the tea is
generally low grade. While the middle of the road dim sum are acceptable and
very inexpensive.
Another reason is that the owner/management  are reluctant to use quality ingredients,
good dim sum relied on good ingredients, the low-quality imported pork surely cannot
compare with the fresh pork used in restaurants in Hong Kong.

but we are already very satisfactory as I compared my experience with my 1st trip to Vancouver 15 yrs ago, it has a great improvement already, I am content and please think about those people living in small towns... I still remember the days when we travelled to Kelowna, etc., those Chinese foods were terrible

are acceptable and affordable.
I do not go for Dim Sum often, but I do know many restaurant operators.

another thing about restaurants here is the standard varies day to day, one day is quite good, the next day could be quite different that you feel you were in new restaurant ! that's why i stop recommending restaurants to friends. even kirin are indifference which is not acceptable as i  feel that they're one of the better ones here, and you cannot pick one here against one in hk.

i think we need to compare apple to apple.  compare the price as well.  even kirin cost $30-40/person for dim sum, which is way cheaper than 2nd or 3rd grade dim sum place in hk.  years ago, i was in a 3rd or 4th grade restaurant in hk(no view) and we paid ~$80cad/person, just dim sum.  the food is good, but not excellent.  but the price is scary.  so i won't complain our food here.

no way you paid 80can/person in a 2nd grade restaurant in hk. that's more than hk 500/person!!!
i just read an article from a retired government officer who's doing a series of food articles in the paper, he paid hk1,100 for 5 people for dim sum lunch, that's can30/person, and it's a top class restaurant although with no view.
average cost of a dim sum plate at fook lam mom is around can6$, hows that compare with here?
