Oysters baked with orange colour mayonaise?
why don't they serve raw oysters on half shell instead,
at least we can tell whether the oyster is fresh or not

For raw oysters, it's best to just get them from good source (not regular supermarket la) and just shuck them by yourself. I got them not from the cheapest place but even Kushi is just less than $15 a dozen. They are easy to open/shuck.
We had 3 dozen among 5 of us and it's good enough as appie before the nice mains (prepared by my friend) after.

Champagne vinegar and shallot Mignonette sauce,
just chop some shallots, add fresh cracked pepper and champagne vinegar

They are available everywhere, i.e. T & T,
however, if you want more varieties, go to Lobsterman at Granville Island,
Salmon Shop etc.
Just scrub them with a stiff brush, and pry open with an oyster knife.
