Yes, it is called Atkinson restaurant equipment, they have another shop in Chinatown.
The 3rd one is Sun Ming Ltd on River Road at Alderbridge.
The recipe is easy but you have to give it a few try to get the knack of it.
The waffle iron is  totally different design, and it doesn't work with the same recipe.
For waffle batter, the egg whites are separated and folded in; resulted in a fluffy &
crispy texture. While the egg puffs are thin, crispy and hollow inside.

Uncle some,

" The waffle iron is  totally different design "  are refer to the shape of the mould or to material of the mould made of, e.g. cast iron, stainless steel or aluminium.

LOL I bought a takoyaki pan thingy...
I wonder does it works w/ 雞蛋仔 lol

The wafflle iron for home use are usually non stick, and they do not allow room for
a big hole in the centre, therefore the texture would be like donuts. And that the
puffs do not cook to golden crisp.
The molds they sell at the Atkinson are cast aluminum, not very good quality, they
are likely to leak when you flip them, well. And the handles are very hot to touch, I made wooden handles to clip on them. Costs $80 to $105,  the commercial  one are $350.

I brought one. didnt you ask them to reserve one for you a if you asked for back order?
anyway. the batter is easy to make. it taste 80% like the one we buy from store but problem is one side looks really good -- golden color and crisp, but the other side didnt "puff" and remains flat. lets call the pen A side and B side. both are pre-heated. batter goes into A side first then I let it cook for about a minute, when turn over the pen, since the batter at A side was cooked so batter wont flow to B side. it turns out the  雞蛋仔 looks like a half ball instead of a full ball. I try to put more batter on a second flat but it all over flow. I was thinking may be next time  I will pour batter to A side then turn it immediatly and let it cook on B side instead so batter would flow, anyone got suggestion?
And personally not recommand to use it on your bbq, the grease from your grill will make it so hard to clean, use the hotpot gas stove if you want real fire.

There's a video demo on the store site:
http://www.williams-sonoma.com/p ... -waffle-pan/?pkey=e|egg%2Bwaffle|8|best|0|1|24||3&cm_src=PRODUCTSEARCH||NoFacet-_-NoFacet-_-Feature_Recipe_Rule-_-
(click on watch video link)

And it shows that after pouring batter the pan is turned right away. I guess that makes a different.

And it's selling $49.99 in US!! !@#$@#!
作者: Helissio    時間: 2012-2-29 11:11

Shipping isn't an issue if they ship to Point Roberts. It's easy to go pick up...
Only issue is they may not take Canadian visa card...
