i went to the burnaby one yesterday and saw newspapers and letters all over the floor...anybody know if they closed down or moved to somewhere else?

taste not too bad.. acceptable..just the rice are too loose.. easy to fall apart..... a bit disappointed..

Sushi rice balls and raw fish always fall apart. They don't stick together at all. No matter how good the chef claims he/she is. This is a problem with Japanese technique. The rice is just not sticky enough. Don't really know why the Japanese still use this lousy technique.

please stop making these stupid comments... we all know you live in a hole for all your life and never seen anything in this world.  

for anyone that have had good quality sushi knows that a expert sushi chef can make the fish stick on the rice without falling apart.  but for a person like you that thinks T&T sushi is the same quality as Sushi Dai in Tsukuji(you probably don't even know where it is!) etc.... i don't think i need to explain any more.

Please control your temper here. Even high quality raw fish is just mild to tasteless. That's why most civilized people all over the world do not eat raw fish.
Japanese rice balls are supposed to be picked up with your fingers, them dipped a little soy and wasabi. If you pick up with your chopsticks and then dip, the tasteless piece of fish will fall off most of the time. This is just a lousy Japanese technique. But the Japanese claim sushi chefs need up to 15 years to learn this squeeze rice ball technique. Japanese sushi rice are just not as sticky as Chinese or Thailand sticky rice.

The problem is not the raw fish stick m stick to the rice.. it's the rice itself not stick together.. aiya.. sushi rice doesn't have to be as stick as chinese sticky rice.. it's that the rice is not firm.. u know.... and for me.. I prefer to use chopsticks.. even if u use ur fingers... if the rice is not firm at all..once u grab it.. not the fish fall..but the rice fall into many many pieces..on the table/ ur plate.... and then u want to use ur fingers / chopstickes.. to put those little loose rice to the fish again? the rice no need to be exteremly firm like a rock..but at least.. firm..ok? or maybe i was just black luck on that day?

Haha...I think you need to do some research before making this statement!  Eskimos eat raw fish.  People in China eat raw fish.  So they're both uncivilized?

You don't have to agree with me. We have freedom of speech. But when I said if the Japanese can make japadog, then we as Chinese can also make Chinese hotdog, some people were surprised. I see Chinese hotdog, Chinese cream puffs etc, as business opportunities. As we all know, what Hong Kong needs are people who are innovative and creative. HK people should not just follow the crowd and chase foreign brand names.

First of all, the statement where you point out that civilized people do not eat raw fish is incorrect.
Other than the small percentage of outliers due to personal preferences, the most civilized people in the world are THE people that eat sashimi. The people that snicker and sneer when they see sashimi are usually people that are so ghetto that they haven't even had the chance to try sashimi in the first place (other than the personal taste preference bunch that i previously mentioned). Second reason being that you just lack the ability to enjoy a marvelous thing called "freshness". Over the history of mankind, humans have been inventing methods and objects to aid in enhancing the freshness of food. Even Chinese, especially guangdong cuisine, go very far to preserve the freshness in food. People all over the world insist to do this even if it means investments of a lot of money and time. Meaning "freshness", unlike sweet, sour, bitter or spicy (which are easily achieved) is the most sought after taste all over the world. Those who eat sashimi (or should I say those who truly knows how to enjoy sashimi), are really looking to enjoy the freshness of the fish. The freshness so strong that you can taste it with every bit of your tongue. But of course, not everyone is fortunate enough to be able to recognize such a marvelous thing. And I'm saddened to know that we are unable to share it with you.

Hahaha, you guys talk like we don't need to cook fish any more, and that we just to eat raw fish from now on. Fresh fish are hard to find, especially nowadays.
Even if we find them, they are nearly tasteless anyway. If raw fish actually taste good then it would be worth it. But the taste is so mild that it is not
worth the price. Now, whether a person like to eat raw fish is just personal taste. You don't have to agree. But throughout the course of civilization
development, the barbarians discovered how to cook their raw meat, instead of just chewing them like wild animals. Some people just cannot stand the rubbery
texture of raw tako and also the gross slimy texture of uni.

There are smart people who eat raw tasteless fish, but that does not mean all those who eat raw fish are smart. Then, there are those smart people who do not like rawfish at all. Well, there is not enough sashimi grade raw fish to feed the world anyway. And those nigiri sushi rice balls always fall apart anyway. No matter how good the sushi chef is, the rice balls will fall apart because the sushi rice is not sticky enough. The Japanese should not create the myth that somehow it can be done by the best sushi chefs.

and I really don't find a correlation between eating sashimi to civilization
cooking is a method and non-cooking preparations are methods as well (ie another example, salads?)

hey mr. most tako used in sushi is poached.... sushi doesn't mean raw fish...
but i love sushi and sashimi, beef capaccio, Yuk Hoe (Korean raw beef), Ceviche (Mexican raw fish with lime juice) and raw oyster.
and i love cooked food as well.
so why do u have to put ppl who like raw food as uncivilized?

my friend works at royal kamei, he just work there for 2 years.. he can make sushi without falling apart.. how often do u go for japanese food??

I should ask somewhereintime to talk to u about it.. he's expert..

I'm not really an expert, however, after teaching 500 sushi classes from H.K. to Los Angeles since 1981, and conducted consultation work for few Japanese restaurants, I  think I know a thing or two about sushi.
Since the topic is about the riceballs we would stick to that issue; my rice balls do not fall apart, period.
You need to squeeze the rice slightly to compact the cylinder, but not so much to crush the rice grains. Once you get the hang of it, everything will be simple. The rice balls weigh 20 grams in Japan while in Vancouver, it is more likely 25 gm and 35 gm in Edmonton. I study foods in culture, I do not consider uncooked foods are uncivilized, it is how they handle and prepare the ingredients. Actually, there is a trend to advocate eating everything raw, backed by some well-educated professionals, doctors and alike.
I do not want to do dog fight, we can cool down and debate, and be civilized; and of course, I accept different opinions. This is not self-advertising, I never need to do advertising, all my business are from referrals only, I do not even take on new clients.
