Anybody using bread machine?  I'm thinking about getting one but don't know which brand is good..

-  I would like it to do the kneading for me, have been kneading dough by myself and now am getting lazy!
- One that's not too nosiy so that it can operate by itself in the morning without waking me up
- Family of two, so probably a 1lb capacity will be enough

We got one from B n D.  There are two types - horizontal or vertical box.  We think the horizontal one is better.  

It is very easy to made bread.  It takes about 5 mins to put in the ingradients and then press the button before going to bed.   Next morning, fresh bread will be ready for breadfast. We have been using the machine for over 3 years and we make about 3 loafs of wheat bread every week.  

There are a lot of setting and you can made dough as well. Lately we saw a version from a China company that can make even Chinese bun.

Thanks for the info!  Does your machine require you to put in water first, then dry ingredients, then yeast?  Or it doesn't matter?

Both the order and measure are important.  I have slightly changed the given instruction though to make a wheat bread instead.  This is my way:

1. Pour 1/2 cup of hot water into the bake pan to melt 2 tble spoon of butter.  Mix in the 2 tble spn of brown suger, 2 tble spn of milk powder, 1 1/4 tsp of salt into the mixture.
2. Add 1/2 cup of cold water
3. Beat a large egg and pour into the mixture
4. From then on, keep the bake pan stable to add the wheat flour
5. Spread 1 1/4 cup of wheat flour evenly on the water
6. Spread 1 1/4 cup of white flour evenly on top of the wheat flour
7. Put 1 1/2 tsp of bread yeast on top.
8. Put the bake pan into the machine and press the button to start.

All measures have to be exact and the order is important.  Also, remember always to avoid wetting the yeast too soon:  Yeast should always be on top of the mixture.

We had our Breville bread maker for less than a month.  Wife still experimenting different recipes and ingredients.  Wife did her research before getting this one, that's all I know.

Bread machine is one piece of cookware I never buy,
It does not make any sense and potential foodsafety hazard.
Consider keeping  eggs, milk, butter at the  perfect condition
for 8-10 hours.
Then the technical issue:  the bread proof (rises) at 37C and
bake at 175C,  we should keep the bread at 37C and place in
175C oven when it is ready. The bread machine  really destroy
the  bread's proper texture.
Yes, you could use the machine for  kneading the dough only,
then you are buying a machine for single task and it is quite bulky.
Do not waste money on that.

The manual did say that you cannot use the delay bake for recipe that contains egg, so it is not an issue with food safety if you follow instruction.
but I do agree that bread bake from the over does have a better texture then the one that comes out from the bread machine.

But I still like my bread machine because it is very convenient and very easy to clean up.
no mess at all.
But for my bread machine, it does wobble when it is in the kneading cycle and it does take up quite a bit of counter space.

I want to try some simple hand knead recipe. any good simple ones?
I like bread with crust. don't like soft Asian bread (unless I am sick... then I will suddenly crave for soft bread and congee)... ill~~ congee (i.e. I am not sick now)

I don't have a bread machine, however I do have a  Thermomix
that would make almost any dough in 2-3 minutes---- bread, mantou,
steam bun, noodle, pasta etc

There are some bread, i.e.  Foccacia, does not require
much kneading. All you need is a large mixing bowl and a wooden spoon
and a pizza pan.

I was the judge for the Skills Canada National Competency Contest 2 weeks ago,  
3 student competitors  brought their Thermomix with them. They are  students too.

My idea is that, if you are going to buy a bread machine just for
mixing the bread dough, might as well buying a basic model of
Kitchenaid mixer. It is powerful  and multi-task, lasting a very long time.
The base model  costs around $200  in Vancouver. Much cheaper in US.
or you get lot of option on ebay, bidding from $50. I  got a Bosch on ebay
for $80, very powerful. But I like the Kitchenaid better.

My family has always used bread machine. Unlike HK, the ingredients in BC(unbleached wheat flour, eggs, margarine, yeast, etc.) are so cheap that a 1.5 Lb load of bread can be made for less than $0.5. The best is unlike bread bought at store, we know exactly what is inside and we can add anything healthy into the bread: Flex seed, wheat bran, cocoa powder, etc....

This is the recipe that I have been wanting to try.
BUT my le creuset pot has a plastic looking nob and I am scared that it will be destroy with the high temp in the oven. Did u use 500? or 450?
How about yeast? I only have regular yeast. Should I go buy instant yeast?

your le creuset pot should work.  Mine is a cheap version from kitchen aid $50, I never have a problem with the plastic nob.

Regular yeast would work too.  Just it may take a bit longer.

My wife bought the panasonic one and she loves it.
Got it from Walmart US online, only US$109, way cheaper than in Canada. The only downside is you have to pick it up in the States.

I finally made my first artisan bread!!
I used the 5 min a day artisan bread recipe instead of the no knead bread one. (cos the 20hr ahead is a bit hard to time vs prepared dough in the fridge that I can use any time)

Made a half loaf and it was yummy and easy!

Will make more and try out with other ingredients! (nuts, seeds...etc)
