You can untag or set tagging NOT allowed on FB. There are a lot of places that you can set your FB profile and security. And you can group ppl into limited profile list to block them on most of the info of you account.
For posting pictures... not much you can do. Just don't get drunk and do stupid things.

Did u forget to take "Network" out from the permission list? Happens a lot to my friends. And ppl's network is usually BIG (e.g. Vancouver, SFU, Hong Kong... etc)
唔做 STUPID THING 解決唔到問題﹐因為有次﹐有人放了一張我自己超唔鐘 ...

Actually you can't set it so that PPL cannot tag you but you can set it so that no one can see that you've been tagged.
In the profile privacy setting:
"Control who can see which sections of your profile. Visit the Applications page in order to change settings for applications. Visit the Search Privacy page to make changes to what people can see about you if they search for you."
under:
Photos Tagged of You
select "only friend" viewable or customized it to a point that no one can see u
I usually add "limited profile" to not able to view my photo tag and video tag as well.
