Many restaurants welcome diners who eat alone la. It depends if you are comfortable eating alone.
I personally prefer settings like:
- sushi bar, a pub or bar that you can chat with the sushi chef or the bar tender.
- quick eats: vietnamese pho, ramen, bbt, tawinese noodle, wonton noodle, mexican places.
- Get take outs and eat at home: deli section of supermarket, (yet better from places like choices/Meinhardt's/urban fair...etc but I don't think there is any in richmond or east van that opens so late), costco (salad and cooked food section), sushi takeout from japanese supermarket, food court, cold dishes from T&T, BBQ meat and rice boxes..etc.

for mexican, my current fav is Dona Cata (5076 Victoria Drive). Their soft tacos are very good. 6 to 8 diff choices for like $2 each. They have ~10 kinds of salsa for you to add as well. BUT I think they close at 9 p.m. So.. you can still go there at 7:30 for a quick bite. (but don't expect taco bell type of food...it's more authentic)
I don't have a current fav for taiwanese noodle now. all my old fav are gone.
