did your mom know how to use a 35 mm SLR? that's where my mom started and she loves taking picture of flowers and dance performances.
She got a hands down Canon XT from my bro-in-law and she loves it as her new toys. Most of the lenses that she already owned work with her DSLR. (yes she is a Canon lady)
She even learn to use some simple Photoshop.
May be you can ask your mom to register in some photography courses for senior after getting the camera.

it is much heavier and bigger to carry around.

Yes. I am always worried about my mom when she goes out for photo shots.
Last time she fell on her heavy backpack (with 2 lenses, flash, tripole and an extra body) and cracked her tail bone. She was in pain for a long time.

So Tofu may need to think about this part as well.
