But as you said, shark fin 唔夠"淋", 好硬 (but anyways I don't eat shark's fin); which 蒜蓉龍蝦, cream brulee 同墩蛋白 and 黑豚肉 is OK but they're nothing related to Hakka and can eat them anywhere else. The only dish is 鹽局雞, which is famous and originally from 東江 and 客家, but still a very common dish.
I don't mean they're that bad, but there are lots of better choices (in terms of similar taste and food quality, cheaper price and bigger portion) out there.
