Air China, and China Eastern are the big Chinese carriers. They use the new planes. This is not surprising because China is the biggest customer of Boeing and Airbus. The new generation of Chinese pilots are trained in Canada or Australia. They have new modern airports in Beijing and Shanghai.
Food and services are above average, but not as good as Cathay. So in particular if the price is good, go for it.

I was told the same thing...even if you have a "wui hurn jing", you can't use it to enter China fr ...

If you just transfer in Beijing airport, you may not need a Chinese visa or "wui hurn jing", because you are not entering China. Just make sure your luggages are transferred, so you don't need to check-in again. I not sure about this.
