Yes, it is called Atkinson restaurant equipment, they have another shop in Chinatown. The 3rd one is Sun Ming Ltd on River Road at Alderbridge. The recipe is easy but you have to give it a few try to get the knack of it. The waffle iron is totally different design, and it doesn't work with the same recipe. For waffle batter, the egg whites are separated and folded in; resulted in a fluffy & crispy texture. While the egg puffs are thin, crispy and hollow inside.
The wafflle iron for home use are usually non stick, and they do not allow room for
a big hole in the centre, therefore the texture would be like donuts. And that the
puffs do not cook to golden crisp.
The molds they sell at the Atkinson are cast aluminum, not very good quality, they
are likely to leak when you flip them, well. And the handles are very hot to touch, I made wooden handles to clip on them. Costs $80 to $105, the commercial one are $350.
