Hey, a little off topic, but isn't Malaysian foods mostly home-style cooking?
Many good Malaysian cooks are housewives and grandmothers, why don't you hire
a few Malaysian ladies and continue your food business? it is not Haute Cuisine
like French and Italian that commanded years of apprenticeship and certification.
I do know many Malaysian/Singaporean/Bruneis that cook very well at home.

Forget the cooks' fans, they can follow him, business could go on without him.
What I want to say is that you can continue to serve authentic Malaysian food
with genuine Malaysian, Public Market Food Court caters to all walks of life,
I used to go there before your business took over, obviously the food are
slightly different, but as long as the quality is good and the price is reasonable.
And I think some people would like to go there just because of your philosophy
to run business. Again, people in the neighbourhood would not go to other
side of the city just for daily fix.
However, all the best wishes to your new venture.
