    It is 2 components in one, the sushi rice and the tamago,
    relatively easy to make but you will need a square pan for
    tamago.
    About half of the econo Jap restaurants are using Frozen
    Tamago to cut down on labour, they taste awful.

    It takes a little effort to get it done properly, since it is high in sugar
    content, it brown easily; so cook it low and slow.
    The 12" copper tamago pan I use would take 12-14 eggs, making a
    big roll.
    Sometimes I put some dried pork floss and chopped nori for texture
    and flavor, it taste quite good.

4  large eggs,
3  TBSP Mirin
1/2 tsp  Sesame oil
1/4 tsp  Salt
Cook it low and slowIf you do not want to bother using the special pan, you can
also bake it in square pan in 350F oven

don't forget I'm an old timer

  It is alright, but careful , the metal is thin and have some
"Hot Spots", cook it on Medium Low heat

    cooking over low flame is quite safe
