    The spotted prawns event is to sell the prawns off the boats,
    as least it is how they promote.    Yes, T & T could be cheaper but the size is random and on the smaller side.
    The high end restaurants pick the good size prawns and sell them for higher prize.
    Just like you do not see any king crab over 13 Lb at T & T, just the smaller one, which
    do not have a lot of meat on them.

At home,I usually steam them  in bamboo steamer,
served with  premium soy sauce with chili and chopped shallot, touch of lime juice.
or Barbecue with Chimichurri dipping sauce.

premium soy sauce mixed with superior broth and Chinese rice wine

    Fresh(live) seafoods are best steamed at high temperature,
    BTW, they are killed before  the cooking commence

I'm not  for PETA, however, there is reason to kill the beast or seafood
before cooking them, just to be more humane and show some respect of yourself
not being barbaric.
I always kill the lobsters before cooking the them. They are still considered fresh.
Again, there are people eating deepfried fish, while the head is still alive and
suffer, or live donkey meat noodle soup.
they claim that it taste great, but I would pass.

I suppose you would trim the sword and the legs with scissors, right?
Just stick the knife tip through the brain and you kill them instantly.
The bodies still move but they do not feel pain anyone. RIP in your tummy

Sometime the sushi chef would toss the prawns in the
pickled ginger brine before serving. A remedy for not too great prawns.
However, do not eat the uncooked prawn heads for food safety concern.
