我啲 係買條菱魚 擺過年
到年初二就煎到條菱魚金黃色
諭意有多餘嘅帶過年 有餘有金

I think you supposed to panfried the dace fish on New Year Eve,
not cooking meat on New Year day; then serve the fish on 2nd. Day of the New Year
as part of  開年飯, along with the leaf lettuce with roots, and chicken, pork belly etc.

Just sprinkle sea salt on fish, pat it dry with cloth (very important if
you want to get unblemished skin)  before panfrying
