Bribing the Maitre d' is a common practice in high end European restaurants
so it is not picking on Chinese restaurant as long as the person pay his

A funeral director receive a lot of  "service fee" in lieu of salary.
In fact, lots of people I know make much more money that the payroll,
for instant,  used car salesman.  It is perfectly legal if they file the income.
Just how much a cocktail waitress makes a night compare to the wages?
Even a waitress at Keg in Langley  makes over $250 tip, it  was on headline
news when the restaurant was hold up and she claimed for  Cash Theft.

I do everything on the table and each penny would be listed on the contract
and taxable. I refuse to accept cash in lieu of  rolling back on Tax.

I've done  many contract works for  national  corporations and government agencies,
and I bill them monthly, never cash. Underground business is illegal in Canada.
