It is much better to get a job as pastry chef' , less stress and way better working environment.
Also, much easier to learn culinary arts once you have the baking background.

You have a long way to go, I happened to meet a whole bundle of junior chefs
at the BC Chefs' meeting at Earls Yaletown on Tuesday.
The kitchen brigade there are youngsters, in their 20's and early 30's
