There aren't enough demand in Richmond to support high class 港式西餐.
Because if one wants high class might go to real high class 西餐 instead, which is everywhere.

The majority of people in Richmond look for less than $15 per dinner for 港式西餐, ALSO was supposed to be good, but they weren't busy and they went down hill.  I went twice I think.  The price was not expensive, but people still didn't go.  Then they did not much customers, so their food quality went down too.

Of course it's due to the culture and quality of the ah jei, but at the end, it's due to the price too.  The ah jei has to be able to serve 10 tables per hour while making less than $10 tips/hour.  The western style waitress makes more than $30tips per hour and do less.  Who would try harder to provide better service?

With the low incentives from cct, which type of waitress would work there?  It's the typical ah jei lor.  Keep that in mind when next time you pay tips in cct.  It's Asian culture to give 10% or less, and it's shared with all staffs in the restaurant.  Maybe you can start changing this culture by giving 20% tips every time.
