Did you make a mistake? Those who are polite and knowledgeable are called architect, surveyor, engineer, electrician, etc...not "地盤佬" lor...LOL from day one 地盤佬 is a stereotype la...and for the amount of work and risk involved, I don't think they make that much more lor.
Will you call an iron chef "廚房佬" sin? I won't lor...only those who swear in almost every sentence and gamble to death I call them 廚房佬. There could be a few exceptions but what I'm saying is in general.
Not that I will look down on these "佬", they're just a name for a certain group of people.

a chef should be respected if he/she can cook food I like, swear/gamble or not, should not be count
What do you mean by good food? Expensive food or food that taste good? Say for a hk cafe (the food can be extremely delicious), most of the time they're called 廚房佬. I probably won't call a cook in hk cafe a chef lor. Whereas in a 3/4 star Hotel (the food can be garbage) they're called chef most of the time.
