so?  I know.  but so what?
what's the difference from farming cow, pig, sheep, chicken , duck..etc   Whether or not how we feed them, how good we treat them, at the end, we kill them, cook them and eat them.
as long as we eat meat, we have to accept the fact.

I used to love foie gras too. Yet I have a stronger and stronger feeling that eating this from a cruel treating make me feel bad, and hence I stop eating it for more than a year already. (cant' deny that it's very tasty)
Eating it or not, up to personal choice la.

I've  never been in love with Foie Gras,  however it is a popular  menu item.
Last time I ate it  in restaurant was in  Perigeux  back in 80's.
Good imported goose liver are hard to come by in Canada and tricky to work with,
and they are usually  frozen, not fresh, 1.5 Kg a piece, too big for average family.
And, expect to pay $500 a Kilo.  not too expensive compare with white truffle from Piemonte.
Most French restaurants use fresh duck foie gras from Quebec.
There are frozen duck fat in buckets available, $50 for 2 Litre. good for sauteeing  potatoes

Never know it's such a deal for Foie Gras at Le Croc. I only remember bone marrows were $10! Seems all the starters at Le Croc is not too bad of a deal then!

But yeah, i was saying more than double the price in terms of a typical meal out of the restaurant. I guess it's correct to say that if your meal involves Foie Gras, don't even bother with Hakkasan. But in general, don't bother with Hakkasan's non-Chinese dishes....

Why would anyone go to Chinese restaurant for Pan Seared Foie Gras?
Teppanyaki is alright, BBQ Foie Gras in Caul nest over real charcoal  would be tasty, but pan seared????
and how fresh is their gooseliver? I could be young and naive, but not sucker

Chinese cuisine is higher class than French cuisine, in general, so Chinese restaurants deserve higher prices.
