For dinning, it is a very personal preferences.
There are a lot of top class restaurants among all those high class hotels.
There are also a lot of famous buffet along the strip.
However, you have to reserve ahead as Vegas is always a very busy place.
Moreover, you need to make sure if you are going to watch any shows at night. I don't think you can always have good dinning and shows at the same night.

For my day 1, this is what I did.
I went to Mandalay Bay and buy the Mandalay Bay Shark Reef/buffet package.
So, with one ticket, you can go to the Shark Reef and have their buffet with a cheaper price.
