Aside from having high nutritional values, eating insects has another significant advantage over eating meat -- raising/growing them is significantly less resource intensive than raising various farm animals for consumption. (Cattle, for example, is extremely resource intensive. Comparatively, swines are better than cattle, and poultry are even less demanding on resources.)
The only major hurdle to eating insects is the repulsiveness. If you just process it (the easiest would be to just grind them up), it'd be no different than eating the "meat" that we have in deli and such.
