Yeah, storing is the best way. Now thinking about it, it seems that a simple rule of thumb can be just for every $10 the wine cost, have to store it for 1 year, with a minimum of 2 years. So...
- $0 ~ $ 20 ~ 2+ years
- $20 ~ $30 ~ 3+ years
...
- $100+ 10+ years.
Probably won't apply after that, but for wine under $100, it seems to make sense? Just BS I came up with random LOL
But if you already got it opened and realized it's acidity is a little over, decanting usually tame it down a little. Younger wine requires more breathing while older wine requires less breathing in general.
