That location used to be "Japone" and I love that place. I took a veggie friend there and he loved the veggie tempura and rolls... it was sad for Japnone to go....
I don't think I want to try Applause.

I went there recently, but the chef and waitresses were Japanese. I don't know why you think they are Chinese.
This place is just average for a Japanese owned sushi place.

Are you sure the chef is japanese? He did look like japanese, but he was chatting in cantonese with his boss.
The waitresses were japanese tho..

I heard the chef thanking the customers in Japanese when they were leaving. They may have more than one chefs. But you know, if it is Chinese owned, they don't normally hire Japanese waitreses. The chef and waitresses talked in Japanese.
