I want to make that too. Prob with chicken. I got a spice package made in Thailand and I need to buy a can of coconut milk and some eggplants before making this dish.
how about some green/red pepper slices to make it more colorful. A few basil leaves will be even better.

I thought about that but my guests just had peppers for dinner the night b4, so I didn't want to make them eat again. Will do it next time and will add coconut milk too.

You are right! actually, eggplant goes great with Green curry!
Green curry is mild in taste, best to use eggplant, mushrooms type not to over power the tastes.
