Well, back to the topic, you can find a good knife-sharpening person to
re-grind the knife-tip if it is not longer than 10% of the blade length.
However, it is not going to be cheap.
Or, you can find a metal shop to do the grinding for you, I have all the
tools to do the fine finishing.
A Shun costs $120-$160, the labour would costs $50 easily.

You can try to take it back to House Of Knives and ask for a quote first.
The horning steel is to re-align the "teeth" on the blade, not really sharpening.
I have 2 diamond grind sharpening machines, Ultra-fine diamond stone
etc to do detail works on fine knives which I treasure.

My brother has those fine, ultra fine, diamond stone sticks, but he is even hardcore than that and have been using leather, etc...to do even more fine detail.
