I heard it's eggs, mirin (you can buy at most Japanese store, I've seen it in T&T), stock (chicken soup), sugar, and soya sauce. Someone told me the secret is you put a little beer in to make it fluffy.  I LOVE tamago too, but I don't know how to make it.

4  large eggs,
3  TBSP Mirin
1/2 tsp  Sesame oil
1/4 tsp  Salt
Cook it low and slowIf you do not want to bother using the special pan, you can
also bake it in square pan in 350F oven

  It is alright, but careful , the metal is thin and have some
"Hot Spots", cook it on Medium Low heat

And I think electric range and gas range would make a difference too.

    cooking over low flame is quite safe
