When I lived alone, I liked to go to Yohan food court and ordered those 3 dishes for 12 dollar one and I can eat them for 2-3 days including my lunch.

If you really want to eat at the restaurant, most likely the bubble tea + restaurants are you best bet.

Many restaurants welcome diners who eat alone la. It depends if you are comfortable eating alone.
I personally prefer settings like:
- sushi bar, a pub or bar that you can chat with the sushi chef or the bar tender.
- quick eats: vietnamese pho, ramen, bbt, tawinese noodle, wonton noodle, mexican places.
- Get take outs and eat at home: deli section of supermarket, (yet better from places like choices/Meinhardt's/urban fair...etc but I don't think there is any in richmond or east van that opens so late), costco (salad and cooked food section), sushi takeout from japanese supermarket, food court, cold dishes from T&T, BBQ meat and rice boxes..etc.

Kam Do in Richmond
didn't kick me out when i ate alone...
i stayed there for hmmm.... 4 hours straight.

Also Vietnamese Pho la..
you can stay at any Pho restaurant and they don't kick you out ah
Stay there for as little as you want, as long as you want

The best place is to eat at home
Take out.. - pizza!!!!

Bubble tea place..
have a  meal to go~

I meant the restaurants open late and welcome single dinner ,
not food quality and price.
I used to go to friend's home for supper when I was single
